Taste like Spring!

Spring is the perfect time of year to cut down on cooking time and enjoy a light and refreshing meal. Best eaten outside in the Spring sunshine, this Vibrant Chicken and Mango Salad will only take 15 minutes to prepare – so you won’t miss out on any of Craigieburn Central’s amazing Spring offers.



My Chicken Rules – Coles Quadrant

500g of Chicken Breast                 

Big Fields Fresh Market – Woolworths Quadrant

4 fresh mangoes (sliced)                

Baby Spinach (washed)


Cucumber (sliced)

1 garlic clove (crushed)

World of Nuts and Coffee – Woolworths Quadrant

½ cup cashews        

Woolworths Supermarket             

Olive oil                                            



Salt & Pepper (to taste)



  1. Slice chicken into small pieces, lightly marinate olive oil and season with salt, pepper and paprika (or any herbs and spices of your choosing) before placing on BBQ. The smaller you slice the chicken, the less time this will take to cook
  2. In a large bowl, combine baby spinach, avocado, cucumber and cashews. You could include any of your other salad favourites too!
  3. In a small bowl, whisk together olive oil, honey, salt and pepper until well combines
  4. Add chicken to large bowl and drizzle in our delicious homemade dressing

Saving Time?

Substitute preparing your own BBQ Chicken with one of Woolworths’ affordable and ready-made Country Style Hot Roast Chickens, prepared daily at Woolworths Craigieburn Central


Add some delicious roasted pumpkin and potatoes to this salad and omit the meat! Simply lightly coat in olive oil and bake until cooked through.
